Avocado drink and spicy potato croquettes

A starter, part of a three-course dinner shared for a Valentine’s day healthy menu. A margarita-inspired non-alcoholic avocado cocktail, something unusual that pairs well with the potato croquettes, spicy and rich in flavour.

Avocado drink
(serves 2)

1 ripe avocado, finely chopped
juice of 2 limes, freshly squeezed
grated fresh ginger, ½ tsp
a small piece of orange zest (organic) – approx. 1 tsp when chopped
some fresh coriander (stems and leaves)
a pinch of cayenne pepper (optional)
water, approx. 1 glass
dried coconut, as decoration for the glasses

Blend the avocado with lime juice, coriander, orange zest, water and spices. You should be able to blend everything easily to get a smooth, but not too thick, mixture. Rub a slice of lime around the rim of each glass to make the coconut stick to it. Turn each glass upside down into the dried coconut. Pour the blended mixture into the glasses.

Spicy potato croquettes
(serves 2 – makes approx. 10 pieces)

2 medium-sized potatoes (previously cooked – boiled or roasted)
4 sundried tomatoes (rehydrated in water)
1 tsp tomato sauce (passata)
½ tsp dried thyme
a pinch of garam masala
a pinch of cayenne pepper
½ tsp coconut oil (measured solid)
2 tbsp plain yogurt (both plant-based or not will work well)

Mash the potatoes, without making them too smooth, together with the sundried tomatoes (finely chopped), tomato sauce, oil (use coconut oil or the same quantity of butter as an alternative) and spices. Prepare some small-sized croquettes and cook in a preheated oven at 180°C for approx 15 min. Serve warm with some plain yogurt.
