These energy balls with a mixture of pumpkin, nuts, oats, chocolate and spices are honestly the best energy balls that I have ever had. They are like little bites of a deliciously decadent chocolate cake.
They are packed with nutrients, especially magnesium, iron, calcium and vitamin B6. All important nutrients to help our body in dealing with stress: a healthy diet can really be a powerful support for us – helpful not just to take care of our overall health, but also to give us an extra help when needed.

180 g cooked pumpkin (roasted pumpkin will work well)
15 small dates
5 tsp cacao powder
100 g cashews
200 g hazelnuts
4 tbsp rolled oats (gluten-free, if necessary)
1 tsp cinnamon powder
1 tsp ginger powder
a pinch of garam masala
1 tbsp cacao butter (melted) or 1 ½ tbsp olive oil
2-3 tbsp of water to blend the pumpkin into a smooth paste
Toast the nuts in a pre-heated oven at 180°C for approx. 10 minutes – check them since they tend to burn quickly. Once they are roasted, you can easily remove part of the skin of the hazelnuts.
Blend the nuts and oats into a flour, then place it in a bowl. Mix the cooked pumpkin, chopped dates, melted cacao butter, and a little bit of water in a blender: you will get a smooth paste (use just the minimum amount of water necessary to blend all the ingredients together).
In a bowl, combine the pumpkin paste, blended nuts/oats, spices, and cacao powder. Place the mixture in the fridge for 20 min. Prepare the energy balls (you will be able to make approx. 25 of them) and roll them in some desiccated coconut. You can use a little bit of extra virgin olive oil to shape the energy balls since the mixture tends to stick to the hands. Refrigerate for at least 10 min. before serving. Store in the fridge, they will keep well in an air-tight container for approx. 3 days.
