(EN/ITA) Oh, hi! 🙋 I'm back after a brief social media break and, obviously, it needed to be a comeback in perfect #amatterofnourishment style: a plate of pasta tossed with a rich, flavorful sauce made with some simple ingredients that are a staple in my pantry such as tomato passata, spices, extra virgin olive oil, and @shinestuna sardines (#brandambassador). Today, I also decided to give to this sauce a small upgrade by adding a teaspoon of miso and some breadcrumbs (for some extra nutrients from #fermentedfoods and a bit of crunchiness). This pasta would definitely make a great weeknight dinner! Who's going to give it a go? Chiara⠀ .⠀ .⠀ ITA >> Eccomi qui! 🙋 Torno dopo una breve pausa dai social e, ovviamente, dovevo preparare un ritorno in linea con la filosofia di questa pagina: un bel piatto di pasta condita con un sugo saporito e fatto con ingredienti semplici che sono dei punti fissi della mia dispensa come la passata di pomodoro, le spezie, l'olio extra vergine d'oliva e le sardine di @shinestuna (brand ambassador). Oggi, però, ho voluto rendere questo sugo ancora più speciale aggiungendo ad esso un cucchiaino di miso ed una manciata di pangrattato (per avere un po' più di nutrienti dal cibo fermentato e per quel po' di croccantezza in più che non guasta mai). Una nota per i lettori Liguri (tipo @the_food_sister 👋): non è pesto, ma vi assicuro che questo sugo si sposava benissimo con le trofie! Questa pasta sarebbe davvero perfetta per una cena veloce durante la settimana 🍝 Chiara

(EN/ITA) I wanted to make a loaf of Barmbrack (the traditional Irish fruitcake) and share it for Halloween but things got a different turn lately and in between food photography projects, taxes, and the everyday life of a business owner, I couldn't fit any extra baked goods. So the last few weeks have been all about simple and nutritious options like this hummus made using my classic recipe (find it on my website) and some extra white beans. Which are your go-to recipes for busy days? Chiara #amatterofnourishment⠀ .⠀ .⠀ ITA >> In teoria avevo programmato di preparare un buon Barmbrack (il tradizionale pane dolce Irlandese legato al periodo di Halloween ed arricchito da frutta essiccata) e condividerlo qui oggi, ma ultimamente sono stata più impegnata del solito e tra progetti di #foodphotography, tasse e la vita di tutti i giorni da persona che manda avanti la propria attività, non sono riuscita ad incastrare anche cose extra da cucinare. Le ultime settimane sono state tutte all'insegna di opzioni semplici e ricche di nutrienti come quest'hummus preparato con la mia ricetta di base (sul #blog) ed una manciata di fagioli cannellini. Don’t underestimate how powerful it can be having the right bread with your burger: I had several disappointing burger’s experiences in which the patty and the toppings were delicious but the bread was awful; I’m afraid but this for me is a no-no.⠀ .⠀ 📷This is one of my soft brioche burger buns (recipe on my site) filled with a vegan patty, goat cheese, fermented red cabbage, pickles, salad leaves, a tahini sauce, and a splash of ketchup. Non bisogna sottovalutare l’importanza che può rivestire l’avere un buon pane in abbinamento al tuo burger: mi è capitato di avere varie esperienze culinarie deludenti in cui il burger in sè ed i vari condimenti erano ottimi, ma il pane era mediocre o proprio poco buono; mi spiace ma per me questi mix sono un no secco.⠀ .⠀ 📷Questo è uno dei miei panini per burger soffici tipo pan brioche (la ricetta è sul #blog) abbinato con un burger vegano, formaggio di capra, cavolo rosso fermentato, cetriolini, insalata, una salsa a base di tahini ed un pochino di ketchup. (EN/ITA) An open toast like this one is a great idea when you don't have much time for lunch but you still want to eat something nutritious, tasty, and a bit special!⠀ .⠀ The details: sourdough bread, Irish buffalo mozzarella (but you could also use some goat cheese), @shinestuna sardines (#ad), sliced pears, fresh thyme, extra virgin olive oil, and a mix of ground cumin and coriander.⠀ .⠀ If you have been following my page for a while now, you have probably already heard me talking about @shinestuna - it's our first choice for tuna and sardines, so I couldn't be happier to be one of their ambassadors. They only sell wild #tuna from Ireland/Spain and sardines from Spain and they are part of @bordbia Origin Green that is Ireland's food and drink sustainability programme. For someone who's innately curious like me, Shines' posts about their products are a continuous source of information: who else's loves learning about where the food comes from? Chiara #amatterofnourishment⠀ .⠀ .⠀ ITA >> Un crostone come questo è un'ottima idea da tenere a mente per quei giorni in cui non hai molto tempo per preparare il pranzo ma hai comunque voglia di qualcosa di nutriente, gustoso ed anche un po' diverso dal solito!⠀ .⠀ I dettagli: pane di pasta madre, mozzarella di bufala Irlandese (ma potresti usare anche del formaggio di capra), le sardine di @shinestuna (ad), fette di pera, timo fresco, olio extra vergine d'oliva ed un misto di cumino e coriandolo macinati.⠀ .⠀ Se segui la mia pagina da un po' ormai, probabilmente mi hai già sentita menzionare il tonno Shines: è la nostra prima scelta per quanto riguarda tonno e sardine, quindi sono stata più che contenta di poter essere una dei loro ambassadors. Vendono solo tonno pescato (non allevato) in Irlanda e Spagna e fanno parte di un programma che promuove la sostenibilità nell'ambito della produzione di cibo in Irlanda chiamato Origin Green. Per qualcuno che è curioso di natura come me, i loro post sui social riguardanti tutto il dietro le quinte dei prodotti sono una continua fonte di informazioni interessanti: a chi altri piace sapere il più possibile sul cibo che mette in tavola? (EN/ITA) It's #worldmentalhealthday and I want to share with you 5 of the many things anxiety taught me - a brief message to remind you that your mental health is just as important as your physical health. Anxiety and panic attacks are absolutely not easy to deal with but they helped me to see things in a different way, so I just can't help but be grateful for that change of point of view.⠀ .⠀ 🐌learning when to rest or take a day off without feeling guilty is as important as staying active and being productive⠀ 👋you don't need people in your life who keep dragging you down and, most of all, you don't have to try to demonstrate them something all the time⠀ 🙋we are all SO different and unique but it's so easy to forget about it⠀ 🐘sometimes you just have to do what feels right TO YOU⠀ 🐣truth is, nobody has it all together all of the time and that's perfectly fine⠀ .⠀ ➡REMEMBER: if you are struggling with mental health, remind yourself that you're not alone and it's perfectly fine to ask for help. If you have friends who are in a difficult situation, get in touch with them. Ansia ed attacchi di panico non sono facili da gestire ma devo ammettere che mi hanno aiutata a vedere tante cose sotto una luce diversa, quindi non posso fare altro che essere grata per questo cambio di prospettiva.⠀ .⠀ 🐌imparare quando riposarsi o prendere un giorno off senza sentirsi in colpa è importante quanto essere attivi fisicamente ed essere produttivi⠀ 👋non hai bisogno di persone nella tua vita che cercano continuamente di sminuirti o trascinarti a fondo e, soprattutto, non hai bisogno di provare sempre a dimostrargli qualcosa 🙋siamo tutti diversi ed unici, ma è molto facile dimenticarlo⠀ 🐘certe volte devi semplicemente fare ciò che ti sembra giusto⠀ 🐣nessuno sà sempre cosa fare o come come andranno le cose .⠀ ➡ RICORDA: se stai vivendo un momento difficile dal punto di vista psicologico, è perfettamente giusto chiedere aiuto.
